These wild turkeys were counting their blessings on Tuesday off Blacksburg Rd.  The rafter ( yes that is the term for a group of turkeys)  of 19 strolled along with little concern they might become dinner on Thursday.

Here is a recipe from the Botetourt VA Tech Extension Home Demonstration Club in the 1970s that will be on our table.  My mother loved getting the recipes and incorporating them into our celebrations as well as every day life

Broccoli Casserole

1 24 0z Green Giant Steamable broccoli and three cheese sauce

1 /2 cup pgk sharp grated cheese

1  regular can Campbell’s Cream of Mushroom soup—low fat version works

2 beaten eggs

1 cup lite mayonnaise

½ sleeve crumbled Ritz crackers

3 tbsp margarine or butter melted

Preheat oven to 350. Prepare Broccoli in microwave per instructions.

Add broccoli to cheese, mayo, mushroom soup and eggs in a medium bowl. Place in a three quart round casserole dish. Bake for 25 minutes uncovered.

Melt butter and add cracker crumbs. At 25 minutes, remove casserole and top with crumb mixture. Bake for 10 more minutes. Remove from oven and let set for 5 minutes. Serves 8. Based on the 1970s VA Tech Extension home Demonstration Club of Botetourt County recipe– my mother and her friends loved the recipes they gleaned from membership in the club. The 2018 version is lower in fat content.
